Forse non tutti sanno che...
It is said that cheddar, like other famous cheeses, was born from a fortunate accident. The episode dates back to 1100 when the milkmaid of a small English village forgot for a whole day to go and get a bucket of milk left in a cave. A practice quite common at the time to preserve and keep food fresh.
Thanks to this oversight, what he found the next day was hard milk, the first cheddar ever.
Officially, this hard cheese originates in a village called Cheddar, in Somerset, southwest England. It was probably produced here for the first time in the 12th century. This area is characterized by the high presence of caves, a humid environment and a constant temperature. An ideal context, then as now, for the maturing of cheese.
Many people wonder why cheddar has such an intense color. In its most natural version, it is yellowish but not bright orange. It all started in the mid-1800s, when Americans who exported the cheese decided to dye it with annatto (a colorant extracted from the Amazonian plant Bixa orellana). James L. Kraft proposed new versions during World War I. Market demand continued to increase and the orange color is still a distinctive feature of this cheese.
